Our Oil is made up with 100% Italian olives (Ravece, Leccino, Tonda di Avellino).
Mountain landscapes and a Mediterranean climate keep in balance the environment where the olive tree with its green leaves and wrinkled bark is a witness.
We cultivate about 4,000 secular olive groves of different types: Ravece, Leccino, Tonda di Avellino.
The area is sourronded by hilly with terraces and grassy slopes.
The conformation of the land and the Mediterranean climate are the natural habitat for this ancient variety of olives.
To enhance the territory and respect the environment we use organic fertilizers.
Wild herbs and pruning residues are chopped and left in the field to enrich the soil with substances useful for its nourishment.
From mid-October to the end of November, our olives are harvested manually with mechanical facilitators.
After the harvested, olives are placed in special boxes and transported to the mill where they will be processed with cold method.
Within 12 hours of harvesting, the olives are transported to the mill where they are processed.
First defoliated and then washed with running water, they are crushed at low temperature and the resulting paste is kneaded.
Thanks to the action of the centrifugal separator which is immediately filtered and stored, the oil is extracted.
